A lot of times, for me, soulful cooking is easy and yummy! I’m a baker at heart and cooking (and thinking about “What’s for dinner?) can be soul sucking.
I’m not the girl who fills up her soul by taking an entire Sunday to create a pot of Gumbo or to make the most flavorful pasta sauce that you’ve ever tasted. Though I LOVE those soulful cooks and I feel very grateful that I’m married to one!

I’m Not Alone in My Dread
I once posted a video about the words I dread hearing, “What’s for dinner?”. I was surprised to learn that there are whole Facebook groups devoted to this topic! Here’s a little taste of that video, plus my mom’s cute cameo.

Leave it to my Junior League of Lafayette friends to create a cookbook full of easy and yummy recipes! My new favorite recipe is Parmesan Chicken. I’ve made it twice in the last week! As my Mom’s handwritten note says: Moist, delicious and easy.
It’s baking in the oven right now and the smell is divine! I figured I’d share my good fortune and the recipe (down below) in case you are one of those moms who hates the question, “What’s for dinner?”.

SOULFUL GIVING SIDE NOTE: I learned a ton about volunteering from my time in Junior League of Lafayette, Louisiana! Parmesan Chicken Recipe
- 6 boneless skinless chicken breasts (substitute chicken thighs – my favorite!)
- 1/2 teaspoon salt
- 1/2 teaspoon Cajun seasoning
- 1/2 teaspoon garlic powder
- 1 stick of butter
- 1 teaspoon Worcestershire sauce
- Juice of 1 lemon
- 1 cup baking mix (substitute Pancake mix – it’s what I had!)
- 1/2 cup grated Parmesan cheese
Preheat the oven to 350 degrees. Season the chicken with salt, Cajun seasoning and garlic powder. Melt the butter with Worcestershire and lemon juice in small saucepan. Mix baking mix and cheese in shallow dish. Dip chicken in butter mixture and coat with baking mix. Place chicken in single layer in lightly greased 9×13 inch baking dish. Pour remaining butter mixture over the chicken. Bake, uncovered for 1 hour or until the chicken is cooked through.

Thank you for sharing this recipe Julie! My family liked it so much more than the other Parmesan Chicken recipe I was using. We are definitely adding it to our list of favorites! I think the cajun season and lemon add so much to the flavor. And I was able to make it Gluten Free by swapping out the baking mix for almond flour.
